Down Home Spun Recipe Mock Apple Pie, A.K.A. Crazy Apple

MOCK APPLE PIE

For all of you apple pie lovers out there, there is a pie that my family and I have been making for years, that we just love. The name of the pie is Mock Apple Pie, but we refer to it as, Crazy Apple Pie. Maybe because we think it is crazy, how an Apple pie, that has no Apples in it, in our opinion, can taste so much, (except for the chunks) like a real Apple pie.




I can imagine by now if you do not know what a Mock Apple Pie is, you are probably thinking, what is he talking about. So here it is, years ago my mother found a recipe on a box of Ritz Crackers, she made a pie using the recipe, the whole family enjoyed it so much that we have been making it for Thanksgiving and Christmas, just about every year sense. I personally have been making this pie, for the past forty years. Truth be told, I prefer it over a real Apple pie .

For 6 years I was president of a non-profit association for Foster Parents,and their children. We would do bake sales to to help keep our funds replenished to provide activities for the children. I would bake two or three of these pies for the sale. I would always tell the person that was interested in buying a pie, "take it home and try it if you don't like it bring it back and I will give you back your money". I never had one pie returned.




Now I don't know how old this recipe is, but that's how we acquired it. If you are interested in trying it out,to see if you might like it, I am providing the recipe just the way we have made it for years. I hope you enjoy it as much as we do.

Mock Apple Pie

2 cups Water
1 1/2 cups Sugar
2 teaspoons Cream of Tartar
1 tablespoon + 1 1/2 teaspoons Lemon Juice
36-40 Ritz Crackers

Make your favorite pie crust:
In a 2 or 3 quart pan mix together water,sugar,cream of tartar and lemon
juice. Bring mixture to a boil. Layer Ritz Crackers into mixture and boil for
2 min. do not stir. After mixture has boiled for 2 min. pour into unbaked pie
shell. Dot with butter and sprinkle with cinnamon and brown sugar. Put on a
top crust and bake at 425ยบ for 30 to 35 min. or until crust is crisp and golden
brown.

If you like, you can layer the crackers in the pie crust. Then follow the directions and make up the mixture (minus the crackers), and pour over the crackers then dot with butter and sprinkle with cinnamon and brown sugar. Put on the top crust and bake according to directions.
